Liquid food is usually a dish for Indonesian people, because
it can be mixed with the staple food, namely rice.
Not only that, usually food that has this broth is very
delicious when eaten in winter.
And many other delights that people can taste from foods
that have broth, such as noodle soup, meatball soup, soup and so on.
Ingredients :
Free-range chicken, split 4 – 1/2 tails
Bay leaves – 2 pieces
Orange leaves – 6 pieces
Ginger, bruised – 2 cm
Lemongrass, bruised – 2 sticks
Galangal – 3 cm
Salt – 1.5 tbsp
Sugar – 1 tsp
Oil for frying – 3 tbsp
Water, for boiling – 2 liters
Ground spices:
Shallots – 10 items
Garlic – 8 cloves
Candlenut, roasted – 5 grains
Turmeric, roasted – 2 cm
Pepper – 1/2 tsp
Coriander – 1 tsp
Supplementary material :
Soun – according to taste
Boiled eggs, split – according to taste
Cabbage, finely sliced – according to taste
Celery, sliced – according to taste
Green onions, sliced – according to taste
Fried shallots – according to taste
Manufacturing steps:
The first step you have to boil the chicken for 5 minutes
until all the dirt and blood from the chicken comes out. Discard the water used
for cooking, then wash the chicken again until clean.
The next step is to put 2 liters of water in the pot. Then
boil the chicken with bay leaves, lime leaves, ginger, lemongrass, galangal,
and also salt. Cook until the chicken is tender. Remove the chicken and drain.
Set aside the broth used for cooking.
Next you have to fry the chicken until browned or cooked.
Lift and drain. Shred the meat.
The fourth step you heat the oil. Saute ground spices until
fragrant. At the same time, you reheat the pot of chicken stock. Put the
stir-fried spices into the pot containing the broth, then stir well.
Finally, you add the sugar, stir well, then continue cooking
until it boils. Taste correction. Turn off the fire.
Ready to be served with various toppings that have been
prepared.
